Abstract:

India produced 31.3 MMT of onion in 2021-22; approximately 70% is stored for 6 to 8 months. Unfortunately, the unavailability of proper storage techniques results in a staggering 30–40% waste. Onion peels (1-2% weight of the onion) are the primary components of this waste for extracting nutraceuticals and cellulose, making edible film, and producing functional food.

Transforming onion waste into high-value nutraceuticals with a sustainable approach to reducing onion waste and creating value from onion residue. Nutraceuticals are products derived from onion residue sources with potential health benefits, making them highly attractive in the health and wellness industry. Advanced extraction techniques isolate and concentrate the valuable nutraceuticals in the residues. Onion peels contain quercetin and other sulfur compounds known for their health benefits, antioxidants, and antimicrobial properties. Sustainable extraction methods, such as enzyme and ultrasound-assisted extraction, are used to minimize environmental impact. Extracting cellulose from onion waste using green technology is a sustainable approach that can be applied in various industries, such as food, pharmaceuticals, and packaging. Creating edible films from onion peels is an innovative and sustainable way to reduce onion peel waste while providing a biodegradable packaging option. Onion peel-based edible films can wrap food products, extend shelf life, and reduce single-use plastic waste. Developing functional foods from onion peels is an excellent way to reduce onion waste while providing health benefits. Onion peels contain bioactive compounds like quercetin, flavonoids, and antioxidants with potential health-promoting properties. Proper utilization of onion peel waste can indeed bring several benefits to farmers and society as a whole.
